Gipsy Joe is the wood-fired pizza master. Our pizzas set out to achieve pizza perfection – and succeed. No stone is left unturned in the quest for the finest pizza to be found in the UK. So what, one has to ask, defines the perfect pizza? For us, the dough base must be fresh, tossed (or rolled) to order, and no thicker than 4mm (uncooked). It must be made from water, yeast, the finest hard flour, and salt. Kneaded, then proved, it must be treated with the care all living things deserve. Only a wood-fired oven can cook a really great pizza – it’s the flavour and the intense over the top 450°C heat that does it. The wood is critical. We use Cotswold hardwood logs – mainly Ash and Beech. All sourced and kiln dried by Fred Walker near Cheltenham from local sustainable thinnings (the process by which smaller weaker trees are removed from established woodland to create more room and more light in which the big boys may continue to flourish). We have tried other wood and other suppliers, but none that come even close to the quality of product and service that we now take for granted from Fred and his team.
